Stout Corned Beef


I have many fond memories from childhood about corned beef. On Sundays, my Dad used to make my brother and I corned beef and egg tacos (seriously try it)! Every St. Patty's Day he would make corned beef with cabbage, onions, carrots, and potatoes. We would make everything into sandwiches with mustard on rye bread. I honestly CRAVE this now. So... now that I am all grown up and moved out I must keep this meal going. In honor of St. Patty's day, I am going to make a corned beef. This won't be your ordinary corned beef. I am going ultra Irish. Guinness and all... :-)












Corned beef:
  • 4 lb corned beef brisket (flat or point cut... keep in mind the point has more fat)
  • 1 cup brown sugar
  • 3 12-ounce Guinness beer (I ended up using one more than in the picture)
  
   
Take the corned beef out of its package and keep the spice package that it comes with. Rinse the brisket and then pat it dry with some paper towels. Take your 1 cup of brown sugar and rub it into the brisket. Cover the ENTIRE thing including the bottom. Place the brisket in your crock pot and sprinkle in the spice packet. Begin to pour the Guinness over it one bottle at a time. If your brisket is not completely covered you can add another bottle of Guinness or just flip the brisket half way through. Cook this on low for 6 hours.
   
Vegetables:
  • 1 head of cabbage
  • 2 small or 1 large brown onion
  • 5 carrots
  • 2 potatoes
 
After the corned beef brisket has been cooking for 6 hours add the potatoes and carrots to the crock pot. Let those cook for an hour and then add the onions. Finally one hour later add the cabbage and cook for an hour. The corned beef will be cooking for a total of 9 hours!!
 
 Take the brisket out of the crock pot and place on a cutting board. From here you can either cut the corned beef into cubes or shred it (my favorite method).
  

At our house we like to make this into little sandwiches. We get some rye bread and spread mustard on each side. Place the corned beef on one side and top with other. Now enjoy!!
